Egg Phuphu Rassa

Egg Phuphu Rassa

Ingredients for Phuphu:

  • Boiled egg yolks: 3
  • Raw egg yolk: 1
  • Green chillies: 2
  • Parsley: 3 sprigs
  • Flour: 1 tsp
  • Salt: To taste
  • Ghee: 2tbsp
  • Chicken stock- 1 cup

Ingredients for Rassa:

  • Ground cashew paste: 1tbsp
  • Ginger-garlic paste: 1tsp
  • Onion paste : 1tsp
  • Garam masla powder: 1 pinch
  • White pepper powder : 2tsp
  • Kewra water – Mild amount
  • Salt: To taste
  • Oil: 1 tbsp
  • Ghee: 1 tsp


Hard boil three eggs and separate the white from the boiled yolk. Finely mince green chillies and parsley. Crumble the boiled yolk finely and add the minced green chillies and parsley, salt and flour and mix well.

Break another egg and add only the yolk to this mix. Now make tiny balls out of this mix and boil for 8-10 minutes in chicken stock. Then fry golden in ghee. The phuphu is ready.

Now make a rassa. Heat oil and add onion paste. When the raw smell goes add ginger garlic paste. Mix well and add the cashew paste mixed in water. Add salt and white pepper powder. Let all the spices mix. Add some warm water.

When it comes to a boil, add the phuphu. When it becomes soft, add garam masala powder, ghee and kewra water and take off heat.

Serve with Vegetable Pulao.
