Mini Apple Pie with Puff Pastry

Ingredients for Apple pie Filling:

  • 4 cups of small cubed apple (  i used green apple)
  • 1/4 cup sugar ( i used brown sugar, if needed u can add more sugar according to ur taste)
  • 1 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/8 tsp ground mace
  • 3 to 4 tbsp butter
  • 1.5 tbsp corn starch

Directions:

Step 1.

  • In a saucepan, take all ingredients except corn starch. Cook it for abt 30 to 40 mins on medium heat. stir it sometimes.
  • add 1.5 tbsp corn starch with 2 to 3 tbsp of room temp water and add this to the apple mixture and cook it for 5 to 10 minutes more.
  • Let it cool completely. Your apple pie filling is done.
  • You can add raisin, blueberry or dried cranberry with this mixture. but i keep it quite simple.

 

Step 2.

  • Puff Pastry:u can use ready made puff pastry. I roll my puff pastry.
  • Cut into round shape and put my pie filling and cover with another round shaped rolled puff pastry and seal the sides with fork just by pressing a little.
  • Cut the top of each pie a little with sharp knife.
  • Brush eggwash on the top for beautiful golden color.. or if u want u can use milk instead of egg wash. Sprinkle little sugar on top , this is totally optional.
  • Bake on 200c for about 16 to 20 minutes.
